Wine produced with one of the oldest grapes of Campania: Asprinio. Already known in Roman times, rediscovered and revalued by the I Borboni winery. Taste and smell expresses mineral tones mainly followed by exotic fruit and white pepper. Excellent with grilled fish.

Winemaking: Fermentation at controlled temperature for 15 days

Refining: aging begins immediately after the end of the alcoholic fermentation, with a stop of about 12 months on the lees, lees stirring and repeated, bringing the lees in suspension, in order to refine and structure to better the final product. The Holy Paten is aged in the bottle for at least 3 months.
