The baba is a sweet Neapolitan sourdough with yeast.

It is left to rise for a long time in a mold of a truncated elongated cone, and then baked in a hot oven. Takes on a golden-amber color and a characteristic shape of a mushroom.

After cooking is extracted, and it is done "dry" for at least one day in order to lose most of the moisture.

It is then thrown to float in jars filled with water-alcohol mixture of rum, or limoncello.
