Passito Falanghina is a sweet wine made from the grape (minimum 90%). To realize this wine the grapes Falanghina are dried and then proceed to the de-stemming because the stalks are able to absorb considerable quantities of alcohol and confer bad tastes to the wine. The grapes are then gently pressed. Followed by fermentation, which stops by itself when reaching a certain alcohol content (between 14% and 16%). In fact, despite being present in the wort substantial quantities of residual sugars, yeasts can no longer turn them into alcohol for the high gradation reached.
