The caiazzana olive Slow Food Presidium is a typical variety of the homonymous territory: Caiazzo. The fruit is characterized by an ellipsoidal shape with a rounded apex and a slightly flattened base. The color of the pulp is violet-black from the outside to the core.

According to tradition it is good to be eat cooked (fired), preserved in brine or in oil.
