Spicy Anchovies of Cetara in oil, freshly caught, are immediately processed by Cetara fishermen, to preserve the freshness and genuineness of the product, in strict compliance with the rules handed down from generations.

The fillets of anchovies are suitable for the preparation of appetizers, bruschette and as a dressing for salads and pasta dishes.

SPICY ANCHOVY FILLETS BY CETARA IN OIL

The fishing of anchovies is a tradition handed down from generation to generation, widespread in coastal areas of Naples and Salerno and particularly in Cetara, where Delfino Battista company works anchovies according to an ancient tradition.

Fishing and processing of anchovies occurs in a traditional way; anchovies freshly caught, are salted a first time in plastic tanks for about 2 days. Subsequently, they are cleaned from the head and the entrails and salted a second time in plastic drums covered with wooden covers and pressed so that the anchovies naturally expel the blood that is subsequently cleaned and from which it derives, with subsequent machining, the famous anchovies sauce of Cetara.

After a maturation period of about 5-6 months, the anchovies are then rinsed in salt water and placed in plastic baskets to drain for about 16-18 hours, to then be filleted by hand and packaged in oil.
